Florida is 800 kilometres long and the north and south ends have genuinely different climates. Miami is subtropical and mild in January. Pensacola in the panhandle can drop close to freezing in the same week. Any advice that gives one best time for the whole state is wrong.
The other thing people get wrong is hurricane season. It runs six months on paper, from 1 June to 30 November, but the genuine risk is concentrated in about eight weeks from mid-August to early October. Treating June and November as dangerous costs you two of the better months in the year.

March and April are the best statewide: warm, dry, low humidity. They are also spring break.

June. Hot and humid, wet season begins, hurricane season opens but risk is low this early. Schools break, so family destinations fill. Water is warm.
July. Hottest and most humid, with daily afternoon storms. Lobster mini-season in the Keys late in the month. Cheapest accommodation in the south.
August. As July, plus the beginning of the serious hurricane window. Lowest prices of the year in south Florida. Sea turtle hatchlings emerge.
September. Statistically the peak of hurricane activity, and the quietest month for visitors. Very cheap. Book refundable rates.
October. Hurricane risk declines through the month and the humidity breaks towards the end. The second half of October is excellent value.
November. The quiet answer. Dry, warm, low humidity, hurricane season effectively over, and prices below the Christmas peak. The best value month in the year.
December. Pleasant in the south, cool in the north. Prices climb sharply from mid-month and Christmas week is peak everything, particularly Orlando.

What actually happens to most travellers is nothing. Storms are tracked days in advance, and the practical consequences are usually evacuation orders, closed attractions and disrupted flights rather than danger.
The sensible response is to book refundable accommodation and take travel insurance in the peak eight weeks, rather than avoiding half the year.
The Keys are the most exposed part of the state, because there is one road out and evacuation orders are issued early.
Inland Orlando is far less exposed than the coasts, though it still gets significant wind and rain.
